DALLAS — The ratings are out, and after last night's ceremony in Houston, 28 restauranteurs in North Texas earned a nod from the Michelin Guide. The prestigious designation instantly makes their food a must-try for locals and visitors.
Only one Dallas restaurant got a coveted Michelin star for "high-quality cooking, worth a stop." That is Tatsu Dallas, an edomae sushi restaurant in the Deep Ellum area. But many others were bestowed the "recommended" designation, meaning good food at a high level and a Bib Gourmand designation, which means good food at moderate prices.

Michelin, the French tire company, created the guide in 1900 to encourage motorists to drive more and increase demand for tires. As the guide grew in importance, the company started sending anonymous food reviewers to evaluate restaurants and began awarding stars to fine dining establishments.
Reviewers evaluate restaurants based on the quality of the ingredients used, mastery of flavor and cooking techniques, the personality of the chef in the cuisine, harmony of flavors and consistency between visits, according to the Guide's website.
The stars awarded to Texas chefs this year will be reevaluated annually.
Tatsu Dallas, the only North Texas restaurant to receive a star, is located at 3309 Elm St. on the northeast side of Deep Ellum. The restaurant hosts two seatings, five nights a week, with each meal lasting approximately one hour and forty-five minutes.
