Sushi Bar, an Austin-based fine-dining restaurant that specializes in Japanese "omakase" eating, plans to open its newest location in Dallas in December.

The new location will be the second in Texas and fourth overall. Adept Hospitality, the group behind the sushi restaurant, also plans to simultaneously open its newest cocktail lounge concept, Ginger’s, which will be attached to Sushi Bar.

Taking on a speakeasy design, Sushi Bar Dallas will include two subterranean sushi omakase rooms, each seating a maximum of 12 guests. The concepts will be located in Downtown Dallas’ East Quarter development, where guests will enter a 100-year-old car lift platform to descend into the basement level.

The concept will walk guests through a 17-course omakase experience. The company said the courses will showcase fish sourced and flown in weekly from places such as Japan, Australia and California.

What is omakase? A loose translation is "according to the chef's choice." Guests receive a menu of small, carefully curated bites, similar to a tasting menu in other kinds of high-end restaurants. They are often small, intimate dining experiences that can cost hundreds of dollars.

"Dallas is the heart of Texas and the food scene here continues to impress and delight locals and travelers alike. A market where consumers truly love dining out is exactly where we want to be," Ryan Stock, CEO of Adept Hospitality, said in a statement. "Dallas has been a focal point for bringing our concept to the market since day one and we are thrilled we finally found the perfect location to do so."

Sushi Bar and Ginger’s are set to open Dec. 1. Reservations for Sushi Bar open on the first of every month for the following month.
