DALLAS — Last year, even though Ronnie Thomas came to Ruthie’s food truck at Klyde Warren Park in Dallas to meet a blind date, he said he didn’t expect anything more than grilled cheese.
“No, I was just going to eat and go home,” Thomas said.
Thomas was there to meet the woman he’d been talking to online. Rachel worked nearby and agreed to meet for lunch.
She said she expected to fall in love with the food.
“If he’s a dud, if he’s not what he turned out to be, I had my favorite grilled cheese sandwich,” she joked.
And that was it. They lost touch, until Rachel was injured in a car accident. They reconnected and Thomas was there to nurse her back to health.
“At that point I knew he was the one,” she said.
They went on many more lunch dates and, without being too cheesy, got married seven months later.
To celebrate, a year to the day after they met, Dec. 14, Thomas surprised Rachel by recreating their first date. He brought balloons and, of course, got her a grilled cheese sandwich.
Both say this time last year, they only came to get a satisfying lunch, but never imagined they’d find what made them truly happy was each other.
“I can’t see my life without her,” Thomas said.
“He loves me in a way to where I feel like there’s no one else in the world that can even measurably replace him,” she said. “He’s just everything. I feel like I’m the luckiest little girl in the world.”
