Heim Barbecue closing North Texas location, opening first Parker County location

Heim Barbecue has four locations in the Dallas-Fort Worth area.

WEATHERFORD, Texas — Heim Barbecue is closing a North Texas location and preparing to open the chain’s first Parker County restaurant.

Heim Barbecue is acquiring former restaurant property and plans to open a new location in Weatherford in mid-2025, said operating partner Will Churchill.

Churchill declined to provide an exact location but said the Weatherford location will be one of Heim’s larger locations at about 6,000 square feet, have private dining and outdoor space, and “the largest bar of any Heim we’ve ever done.”

“Weatherford’s obviously a very fast-growing community…We’ve had a lot of clients from the Parker County community asking us to come out there,” said Will Churchill of Heim Barbecue. “We’re super excited to be coming to Parker County.”

Churchill said the new location will also bring back line service, which the company had largely done away with during the COVID-19 pandemic.

Heim will close its Burleson restaurant at 130 W. Ellison Street on Dec. 29. It’s one of four Heim locations in the DFW area, including one in the 1100 block of W. Magnolia Avenue in Fort Worth, one in the 5300 block of White Settlement Road in Fort Worth, and one in the 3100 block of Mockingbird Lane in Dallas.

Travis and Emma Heim started with a food truck in Fort Worth before they opened their first restaurant, the location on Magnolia Avenue in Fort Worth, in 2016. That was followed by a location in west Fort Worth and one in Dallas near Dallas Love Field.

Known for candied “bacon burnt ends” the menu also now includes burgers, smoked chicken and more.

Heim has received an honorable mention in Texas Monthly’s list of the top 50 best barbecue joints.
