Pumpkin Bread Batter
8.5oz canned pumpkin puree
1.5 cups granulated sugar
2 eggs
2/3 tsp baking soda
¾ tsp salt
¼ tsp ground clove
½ tsp ground nutmeg
½ tsp ground cinnamon
½ cup canola oil
1 2/3 cup all-purpose flour
1 tsp baking powder
Mix all ingredients except flour and baking powder in standing mixer until smooth about 1 minute, scrape down sides of bowl. Add flour and baking powder mix until combined.
Pumpkin Bread Topping
1 cup brown sugar
1 cup chopped pecans
¼ tsp ground cinnamon
Mix all ingredients
To bake-
Preheat oven to 375 degrees. Spray a loaf pan with non-stick spray and line with parchment paper. Pour pumpkin batter into pan top with pecan topping. Bake for 55-65 minutes or until a skewer inserted in the center comes out clean.
